Yummy Healthy Sunshine Muffins

Preheat oven to 375
Mix in large bowl:
1 very ripe banana
1 egg
3 Tbsp melted coconut oil
4 Tbsp pure maple syrup
1/2 cup unsweetened apple sauce
4 Tbsp date paste
1/2 cup unsweetened coconut milk
3 finely chopped carrots, peeled
1 finely chopped apple, peeled and cored
1/2 cup almond flour
2/3 cup gluten free rolled oats
1 cup gluten free flour
1 1/2 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
Mix well, and fill muffin liners or greased muffin cups.
Bake for 30 minutes or till lightly browned.
Enjoy warm or cooled : )
