Double Strawberry Healthy 'Cheese' Cake

Crust:

1 cup raw walnuts

1/2 cup unsweetened coconut

3/4 cup medjool dates, pitted

1/2 tsp pure vanilla extract


Mix all ingredients in food processor till it sticks together. Press into springform pan, and place in freezer to set.


First Layer:

1 3/4 cup raw cashews, soaked in boiling water for 15-20 minutes

1 lime, juiced and a lil zest

3 Tbsp pure maple syrup y

5 Tbsp melted coconut oil

3/4 cup pure vanilla extract


Mix well in food processor till smooth, scraping sides a couple times.


Pour on top of crust, and set in freezer.


Strawberry Layer:

1 3/4 cup raw cashews, soaked in boiling water for 15-20 minutes

1 cup strawberries, hulled

2 limes, juiced, and a lil zest

2 Tbsp pure maple syrup

1 tsp pure vanilla extract

5 Tbsp coconut oil, melted


Mix in food processor till smooth.


Pour over top and smooth out and set in fridge.


Store in fridge.
