Yummy Healthy Oatmeal Cake

Measure 1 cup of oats in bowl and pour 1 1/3 cup boiling water over top and stir. Let sit.

Preheat oven to 350.


In large bowl:

Add 1/2 cup butter, softened

1/2 cup coconut sugar

1/2 cup organic cane sugar


Combine well with back of wooden spoon

Then add:

2 eggs and mix well

Then add dry ingredients and mix well;

1 1/3 cup multigrain flour

1 tsp baking soda

2 tsp cinnamon

1/4 tsp nutmeg

1/2 tsp cloves

Mix well, then add in oatmeal


Pour into 8 inch pan. (Grease with butter if it's not a stone)

Bake 30 minutes or till knife comes out clean.


Topping:


Mix in medium bowl;

1/3 cup butter, melted

1/2 cup coconut sugar

1/2 cup coconut

1/2 cup chopped nuts (I use walnuts or pecans)

1/4 cup of coconut cream

1/2 tsp pure vanilla extract


Pour topping over cake as soon as it comes out of the oven and then let cool.

Cut into squares and enjoy! (store covered in refrigerator)
