Yummy Healthy No Bake Cookies

(Kid approved)

In large bowl, mix: 3 cups of oatmeal 1/3 cup cocoa 1 1/2 tsp vanilla or almond extract

In medium pot: 2/3 cup maple syrup or honey 1 cup natural peanut butter (or other natural nut butter) A little more than 1/2 cup coconut oil, melted

Heat on medium heat, stirring constantly just till it starts to boil. Remove from heat, and pour into dry mixture. Mix well. Drop by spoonfuls onto wax-paper lined cookie sheet. Refrigerate till set. Store covered in fridge.
