Yummy Healthy Chocolate Peanut Butter Cups

Chocolate: 1/2 cup date paste (to make your own, put 5-6 Medjool dates in a cup and pour filtered water on top till just covered. Leave

for an hour, or boiling water for 15 minutes) Then, pour it all into a ninja bullet or food processor and process 30 seconds, or till smooth.)(or use 4-8 Tbsp Maple Syrup-adjust according to taste) Add: 3/4 cup cocoa 1/3 cup melted coconut oil And process till smooth chocolate, making sure to scrape the sides well.

Line muffin pan with paper cups. Cover the bottoms of each cup with a bit of chocolate, and smooth out. Freeze while making filling.

Filling: 3 rounded Tbsp natural peanut butter 1/4 cup coconut 1 Tbsp maple syrup

Mix altogether, and spread on top of chocolate bottoms. Top with remaining chocolate, and smooth out. Freeze 10-20 minutes, till set.

Makes 8

These are best if you leave them in the freezer, and let them set 5-10 minutes before eating.
