Sweet Potato Quinoa Salad

In large bowl, add equal amounts of: cooked, cubed sweet potatoes, salad mix (shredded broccoli, cabbage, brussel sprouts, kale, & chicory), and cooked quinoa.


Scoop into bowl, and add dressing of choice.

(I used Litehouse Foods Organic Balsalmic Vinegrette Dressing.)


You can also top with nuts or seeds of choice.
