Sunshine Eggs

On low heat, melt 1 Tbsp of mild flavor coconut oil in frying pan. Saute chopped peppers. Then add chopped red onions and garlic. Cover, and let simmer 15-20 minutes, stirring occasionally.

Whisk eggs in bowl with spices. I used Chili powder.


Then pour on top of veggies in pan. Add cooked meat pieces, like chicken. Stir occasionally. Top with cheese, cut in slices.
