Healthy Pad Thai

Cut a spaghetti squash into two or three pieces, and roast in oven on 425° F for about an hour - till tender.


In small bowl, mix the sauce:

4 Tbsp coconut sauce (aminos)

3 Tbsp apple cider vinegar

2-3 garlic cloves, crushed

1/4 tsp red pepper flakes (or more if you like it spicy)


Stir till red pepper flakes are mixed in well. Set aside.


In frying pan, sauté:

1-2 Tbsp olive oil

1/2 sweet onion, finally chopped

2-3 garlic cloves, crushed

Two green onion, chopped

1 fresh basil leaf, cut small

1/2 - 1 carrot, finely chopped or grated


Add in 3 cut up chicken breasts, cover and cook till chicken is done.


Use a fork to scape out spaghetti squash.


Place all ingredients in a large pot. Pour sauce over, and mix well.


Make a space in the middle of pot and cook 3 eggs. Mix altogether. Cover and continue to cook till eggs are done.
