Healthy Mexican-style eggs

Melt coconut oil or butter in a frying pan.
Sauté chopped onion and garlic.
Add slightly beaten eggs, and Chili powder.
You can add cayenne if you like it spicier
Scramble while cooking.
Add cut up cheese, and allow it to melt a bit.
Scoop eggs onto plate, or onto a tortilla, and top with salsa (make sure there's no sugar in it)
I used black bean and corn salsa
Enjoy!
