Healthy Cranberry & Orange Pulp Scones

(Teens love these)


In large bowl, beat:

2 eggs

Less than 1/4 cup honey

1/2 cup applesauce

1 tsp vanilla


Then fold in 1 cup of orange pulp


Add:

2 cups unbleached white flour

1 cup whole wheat flour

1 tsp baking powder

1 tsp baking soda

Pinch of salt


Mix till sticky dough.


Fold in 1/2 cup dried cranberries (optional)


Drop on baking sheet in scone shapes.


Bake in preheated 350 oven for 15-17 minutes.
