Healthy Chocolate Mint Patties

Preheat oven to 400°


(These taste like Girl Guide Cookies!)


In medium bowl, mix:

1 cup unbleached flour

1/4 cup cocoa


Then add:

5 Tbsp pure maple syrup

8 Tbsp melted coconut oil

1 tsp pure vanilla extract

3/4 tsp peppermint extract


Mix well.


Make very thin patties with your hands, by squishing the dough together, and shaping them.


Place on baking sheet.


Bake for 7 minutes.


Remove to rack to cool.


Chocolate:

Mix in small bowl:

1/4 cup cocoa

1/4 cup coconut oil, melted

3 Tbsp maple syrup

1/8 tsp peppermint extract


Coat patties with chocolate, and place on a plate lined with parchment paper.


Place in freezer 10-20 minutes, till set.


Store covered in fridge.
