Healthy Bounty Bars

In medium bowl, mix well:
A 141g box of Creamed Coconut (place pkg in hot water to soften, then knead clumps out)
1/2 cup unsweetened coconut
1/2 tsp pure vanilla
1 tsp maple syrup
Place on plate, and shape into a rectangle.
Freeze while making chocolate.
Chocolate:
Melt 1/2 cup coconut oil (that hardens in fridge)
Add 1/2 cup cocoa.
Mix well.
Add 6-8 tsp maple syrup (depending on taste)
Let sit to cool a bit.
Take coconut mixture out of freezer, and cut into 5 bars.
Line bars on parchment paper on plate, leaving a small space in between.
Pour chocolate over top, carefully lift up every bar with butter knife so chocolate covers underneath as well.
Sprinkle it all with more unsweetened coconut.
Return to freezer 10-15 minutes or till set.
Cut out bars. (The extra chocolate covered coconut is yummy too.)
