Healthy Apple Caramel Pie

Healthy Caramel Sauce:

In food processor or blender, mix till smooth:

20 dates, pitted

1 1/2 cup coconut milk

4 Tbsp maple syrup

2 tsp vanilla extract


Shortbread Pie Crust:

2 1/2 cup unbleached flour

3/4 cup butter, softened

1/4 cup shortening

6-7 tsp cold water


Place flour in bowl, add butter and shortening, and mash with a masher.


Add in water till ball forms when squeezed by hand.


Make 2 balls, then wrap in saran wrap and refrigerate for an hour.


Then take half of one, and add it to the other, and roll out on floured surface.


Wrap on rolling pin, and place in Pie plate.


Roll out the rest for strips for the top of pie.


Slice 5-6 apples, and place in pie plate.


Sprinkle with 2 Tbsp cinnamon and 2 Tbsp organic coconut palm sugar.


Pour Caramel Sauce over top. Lattice strips of pie crust over top.


Bake in preheated 350° oven for 1 hour and 25 minutes.
