Amazing Quinoa Breakfast

(Inspired by The Alkaline Sisters)
In medium pot, mix:
1 cup organic quinoa
1 tsp cinnamon
Few sprinkles of ginger, nutmeg & cloves
Then add:
3 cups unsweetened coconut milk (from carton)
Bring to a boil over medium heat, stirring frequently.
Reduce to low to med- low heat, cover, and boil 5 minutes.
Peel and chop 1 medium-large apple. (If your blueberries are frozen, you can also add them now, if they're fresh, add them in at the end)
Add into pot, cover, and cook another 7-10 minutes, stirring after 7 minutes, then watching to make sure it doesn't burn.
When most of the liquid is absorbed, remove pot from heat, and let stand, covered 5 more minutes.
Top with banana and blueberries, and or any other alkaline topping.
Store covered in the refrigerator.
Heat back up in a pot on medium heat, stirring continuously. Then add banana.
(This make enough for a couple days, so you can make less if you like)
