Healthy Moist Blueberry Breakfast Muffins

The night before, mix in large bowl:
2 1/2 cups oats
1 1/2 cups milk
Cover and refrigerate 8-12 hours.
Preheat oven to 375° F
Then add:
1 g egg, slightly beaten
1/3 cup maple syrup OR 1/3 cup unsweetened applesauce
1 tsp vanilla
1 1/2 tsp cinnamon
1 tsp baking powder
Pinch of salt
Mix well, then add:
3/4 - 1 cup blueberries
Pour into muffin cups.
Bake for 25 minutes.
Cool a bit before eating.
Enjoy!
