Coconut Chocolate Chunk Cookies

Soak 1 cup of raw cashews overnight, or soak in boiling water for 15 minutes- covered with a tea towel.


Preheat oven to 375° F


Drain water, and pour into food processor and add:

the juice from one fresh organic lemon

1 Tbsp melted coconut oil

2 Tbsp coconut palm syrup

1 tsp water


Process till smooth.


Pour into bowl, and add:

3 tsp coconut milk

2 lg eggs, yolks broken

1 tsp vanilla


Mix well. Then add:

1/3 cup coconut sugar

5 Tbsp coconut flour

3/4 cup coconut

1/2 cup chopped chocolate (I used unsweetened)


Mix till well blended.


Drop by Tablespoons onto baking sheet.


Bake in oven for 15 minutes, or till just starting to brown.


Cool a few minutes, then remove from pan.


Store in fridge.
